160g blue cheese softened

115g butter at room temperature

1 3/4 cups plain flour

2 Tablespoons of cornflour

1/2 teaspoon ground black pepper

3/4 cup of walnuts, broken into small pieces

cream cheese

1 ripe pear


   

1. Beat the butter and blue cheese until creamy. It will look quite ghoulish and green at this stage, don’t panic.

2. In a separate bowl, combine the flours, pepper and walnuts.

3.Stir the dry ingredients into the cheese and butter mixture, using your hands if you need to work it into a dough.

4. Divide in half and roll into two logs approx 20 cm in length. Wrap in cling film and refrigerate until firm.

5. Preheat the oven to 170deg C.

6. Cut chilled logs into 1 cm slices and place on baking trays lined with parchment paper.

7. Bake for 10-12 minutes until golden brown. Cool on a wire rack and store in an airtight container for up to three days.

8. Top with cream cheese and a slice of pear and serve with a glass of Iced Happiness Tea.
