2 cups of Plain flour

1/8 teaspoon baking powder

1/2/ teaspoon salt

180g unsalted butter, cool but not cold,

1/3 cup of castor sugar

1/3 cup of firmly packed brown sugar

1 teaspoon vanilla extract

1 egg

110 g crunchy peanut butter

1/3 cup salted peanuts

sea salt flakes


   
       

1. Sieve the flour, baking powder and salt together. Set aside.

2. Cut butter into chunks and add it to a food processor along with both sugars. Whiz them until light and creamy. Add vanilla and egg and whiz for 10 seconds.

3. Add the peanut butter and blitz briefly until combined.

4. Add the flour mixture to the processor and combine with on/off pulses, until it just forms a thick soft dough. (don’t overdo the mixing otherwise the biscuits will be tough).

 
 

5. Scrape the mixture into a bowl and add the peanuts, you might need to do this with your hands. Tip the dough out onto a very lightly floured surface and divide in half.

6. Gently knead the dough together until smooth and roll it into a long sausage, approx 5 cm in diameter. Roll the sausage up in a piece of baking paper. Then roll the paper sausage in a piece of aluminium foil and twist each end, sealing it like a giant lolly.

7. Repeat with the rest of the dough and refrigerate for at least 2-3 hours. At this stage you can also freeze the logs, they keep well for up to 5 weeks.

8. Pre-heat the oven to 150 deg C. Line some trays with baking paper. Unwrap the logs and cut them into slices approx 6mm thick. Place them on the trays 5 cm apart and sprinkle them lightly with sea salt flakes. Bake for 20-25 minutes until they are golden brown. when cool enjoy them with a pot of freshly brewed Green Green Tea.
