180g Butter

250g caster sugar

3 eggs lightly beaten

Grated rind of one large orange

2 1/2 cups of Self Raising Flour

Pinch salt

150ml milk

for the ripple mix
2 tablespoons of sugar

60g finely grated cooking chocolate

1 level tablespoon of cocoa

1 level teaspoon cinnamon

1 level teaspoon mixed spice


1. Preheat the oven to 180 deg C

2. Grease and line a 25cm ring tin.

3. Combine all the ripple ingredients and set aside in a small bowl.

4. Cream butter and sugar with orange rind until light and fluffy. Gradually beat in the eggs.

5. Sift the flour adding a pinch of salt. Add it to the mixture alternatively with the milk. Make sure you start and end with the flour. Mix until smooth.

6. Spread one third of the batter into the tin. Sprinkle the ripple mix over the top. Carefully add the remaining batter. Use a cake skewer and gently trace a wiggly line through the mixture to create a ripple effect through the three layers.

7. Bake for 40 minutes or until cooked.

8. Cool slightly in the tin and then transfer to a wire rack.

9. While still warm, call on your neighbours and share a little cake and Friendship with them.
