Combine the sugar, flour, coconut and rolled oats together in a
large bowl.

In a saucepan melt your butter and golden syrup together. In a small
cup dissolve the bi-carb soda in boiling water and add to the buttery
syrup. The mixture will immediately froth up so watch it doesn’t
spill over the top. Add a few drops of vanilla extract.

Pour mixture into the dry ingredients and stir to combine. |
