1 cup of sugar

1 cup of plain flour

1 cup of desiccated coconut

1 cup of rolled oats

100g butter

2 Tablespoons
of Golden Syrup

3 Tablespoons boiling water

2 teaspoons of
Bi-carb soda

vanilla extract


   
 

1. Combine the sugar, flour, coconut and rolled oats together in a large bowl.

2. In a saucepan melt your butter and golden syrup together. In a small cup dissolve the bi-carb soda in boiling water and add to the buttery syrup. The mixture will immediately froth up so watch it doesn’t spill over the top. Add a few drops of vanilla extract.

3. Pour mixture into the dry ingredients and stir to combine.

 

4. Place dessertspoons of mixture onto a greased oven tray. In you like your biscuits uniform in shape, roll the mixture into balls and squish them down with a fork on the tray. Allow room for spreading.

5. Bake at 180deg for 12-15 mins. Carefully remove biscuits from the oven tray while still warm and allow to cool on a wire rack. Enjoy with a pot of Happiness Tea.
